雖然白茶製程看似簡單，卻是最耗時的茶款之一。
高山氣候冷涼、日照短、雨水多，茶葉生長緩慢，製茶時又以自然萎凋方式處理，需長時間等待水分自然散去，不能炒、不能揉，極度仰賴氣候與經驗。產量低、耗工重，好茶自然彌足珍貴。
